1: 2 to 4 medium to large Tomatoes or large handful of Cherry Tomatoes
2: 250g Bocconcini (about 8 small balls) or 1 large Mozzarella ball
3: White Balsamic Vinegar or good-quality herb vinegar
4: Extra Virgin Olive Oil
5: 1 handful of fresh basil leaves
6: 1 Spring onion, very finely sliced
7: Sea salt and freshly ground pepper to taste
Method / Direction
Step 1: Chop the tomatoes roughly into chunks or quarter the cherry tomatoes. Put this in a salad bowl.
Step 2: Slice or tear the Bocconcini (or Mozarella) into smaller pieces and add to the tomatoes.
Step 3: Roughly chop up some basil leaves (leave a few leaves aside for garnishing). Add this and the spring onion to the bowl.
Step 4: Drizzle the olive oil and vinegar all over the salad. Toss the salad with a spoon to mix.
Step 5: Season with sea salt and ground pepper to taste.
Step 6: Garnish with the remaining basil leaves and serve.
